One is the conventio...There are 2 types of congee. One is the conventional "high heat" boiling without covering for over 1.5 hours. Best to use the "broken" rice (碎米). You can still see some tiny rice in it. This one smells very "rice" aromatic. The other one is the newer cooking style to cook "rice" powder into some "paste" like congee. It's in a smoother texture but not that rice aromatic. From what Mr. Mickey described, he prefers the former one.<br /><br />Those on the photos look very nice.
